Ingredients needed for quinoa salad:

  • 1.5 cups of quinoa seeds
  • 3 glasses of water
  • 1/2 teaspoon of salt
  • 1 large cucumber
  • 1 roasted red pepper
  • 50g of olives
  • parsley
  • 2 heads of red onion
  • cherry or regular tomatoes
  • 50g of cheese to taste (feta, goat, sheep or other type)
Salad preparation

Method of preparation for the dressing:

  • 2 large spoons of olive oil
  • 2 tablespoons of balsamic vinegar
  • 1 head of garlic (to taste)
  • 1 and a half teaspoon of honey
  • 1 and a half teaspoon of oregano
  • a little oyster to taste
  • a little oregano
  • half a teaspoon of salt

This dosage for the preparation of the dressing can be of your choice, it depends on what you want to have in the salad and what flavors you enjoy.

Method of preparation:

Put 3 cups of water in a bowl and heat it on a hot plate. After the water is heated, add the quinoa seeds. After a few minutes, reduce the temperature and close the container. It takes about 15 minutes to properly digest quinoa seeds. After those 15 minutes have passed and so that the seeds are not too mushy, toast the seeds a little and then leave them in the refrigerator for about 10 minutes.

For the dressing, you need a small bowl in which you put olive oil, balsamic vinegar, a head of garlic, honey, oregano, salt, oyster mushrooms. You mix it all until the ingredients are combined.

When all the components of the salad are ready to be combined, first we place the chopped vegetables, olives and cheese in a large bowl, then we add the pre-cooked quinoa seeds, stir and finally add the dressing that is also prepared for us.

This prepared salad can be kept for several days in the refrigerator and eaten whenever you want and it is important that you already have a prepared quinoa salad and it can be combined with other food of course.

It takes about 20 minutes to prepare this quinoa salad.
